Entertaining 101

Here's my collection of tried and true recipes and ideas for entertaining. Check back for updates.

Munchies
  • Fancy goat cheese. Easy and impressive-looking. Buy a log of plain goat cheese. Roll it in chopped pistachios or fresh herbs. Be sure to chill well before rolling so that cheese is hard and easy to handle. Serve at room temperature whole with crackers or toasted baguette rounds.

Main Courses
  • Martha Stewart's Shrimp and Scallop Stew - this is fabulous and what takes longest is the prepping and chopping. It's worth spending time on the broth though - it is addicting and I freeze leftovers to use as starters for seafood pasta sauces. The stew tastes much better the next day, just be sure to warm gently so as not to overcook the seafood. Definitely serve with the suggested side dish (Israeli couscous).
  • Rotisserie chicken with roasted cauliflower and potatoes - couldn't be easier for an informal dinner. Buy a whole rotisserie chicken or two, carve and serve on large platters. Sprinkle cauliflower florets and halved fingerling potatoes with salt, pepper and drizzle with olive oil. Squeeze lemon or lime over the cauliflower. Bake in a preheated oven at 425 degrees for 30 minutes or until tender. Line the baking sheet with aluminum foil for a no-fuss clean up.


Desserts
  • Martha Stewart's Lemon Cream Pie is easy even for non-bakers like me. I buy a good quality pie crust and omit the gelatin in the whipped cream. 
  • Williams-Sonoma Coconut Cupcakes - I love that this recipe is written for kids. You can rely on your spouse if you need adult supervision, especially when it comes to licking the bowl!
